When i think about protein, i think about meat. I really like eat meat especially cow or beef meat, the sirloin, ribeye, iron-flat the cheapest one. I thought the steak can cook directly fresh from market but it's a no at all. Some meat need to undergoes drying age process first at least few days-120 days at most. The drying age process is meant to allow the enzymes naturally exist in the meat to break down the muscle tissue, which resulting improve the texture and flavor.

Its hardly to search or find where the place of drying age beef in this country. I thought, hey, that is good business idea. but i need to make a research report on the market, who will be the consumer, the cost, where the place.
